3. Function & Application

(1)Trisodium phosphate (TSP) is a cleaning agent, lubricant, food additive, stain remover and degreaser.
(2)Trisodium Phosphate is an emulsifier and buffer that is strongly alkaline, with a ph of 12. it is moderately soluble in water, with a solubility of 14 g/100 ml at 25°c. it functions as an emulsifier in processed cheese to improve texture. it maintains viscosity and pre- vents phase separation in evaporated milk and is also found in cereals. it is also termed trisodium orthophosphate, sodium phosphate tribasic, and trisodium monophosphate.
(3)Trisodium Phosphate has been used in the food industry as emulsifying agent, buffer, and brine constituent, such as used in processed cheeses and dairy products.
